Introduction to the Cellar
The VBOM wine cellar houses some of the finest wines a lot of us will ever get a chance to get our hands on. The cellar is well stocked and well managed by the Cellar team. Every year they release some of the wines reaching maturity, so keep you ear to the ground, your eye to the sky, and your nose down wind from the that damp, musty place of pleasure.
The Cellar Committee are a hard working bunch of people who provide a significant contribution to the mess. They have their fingers in every pie, so be sure to try some of it. For some of us our time at Victoria Barracks is pretty short - so dont miss the opportunity. Here are just some of the things the Bar and Cellar, and Social Committee tee up for us. Cellar Releases
The mess operates a wine cellar service for the mess membership. The cellar has a reputation amongst the wine representatives of Sydney for its valuable vertical wine collection. The cellar is operated by the Cellar Member and the cellar sub-committee as required by the mess constitution.
Two wine releases are made available in May and October/November each year. Members are invited to make their bids against the release inventory. Remember, only financial members can bid for wine (so pay your mess bill).
Members must collect their purchases from the cellar as arranged. Please note that uncollected orders will only be held for a limited period.
More information on the cellar release will be provided as the date comes closer.
Black Tie Wine Dinners
Black Tie Wine Dinners and End of Month Buffets
As an extension of the Cellar service the Cellar Sub-Committee host wine degustation dinners (Black Tie Wine Dinners) and wine tasting buffets (End of Month Buffets) each month. As a feature of these functions, wine may be ordered by members and attendees at attractive prices.
The dinners are a fine dining experience which provides an opportunity for the membership to sample select wines which may not be available over the bar or stocked in the cellar.
